Mustard is the best! Its so easy to make and customize.. now you have no reason not to. Also, you show up at a lil BBQ or party with your own mustard and...who's better then you babe!

@Fernando Cazelli Maybe a Rose? Or a white wine? I personally would probably use a dry white since he said he's using the Verjous for acidity.

I have bought bulk mustard seeds and there are yellow mustard seeds and there are yellow mustard seeds that taste completely different than the other kind and they are all just called yellow! How do you know what kind you are buying? Then there are the black or brown mustard seeds. Roast them in a pan and grind for good umami roasted flavors. They seemed a little bitter for mustard, but they would probably mellow with vinegar and probiotic curing. Love the probiotic in the mustard.

I love mustard! I made some at Thanksgiving w cranberry sauce! Nice content! Fermentation is so fascinating... don't listen to people who throw shade... homemade relish is wonderful also! Thank you !

I made mine with sour cucumbers juice instead of sauerkraut one, instead of that grapes juice I used water with some anise and cloves (boiled for few minutes) and molasses (left to chill before adding). Covered it with thin layer of roasted sesame seeds oil - I usually do that if I don't want things to dry or get covered with mold and it should give some nice flavour to it. Now it's taking some time in the corner of the kitchen for a week. Then I will add apple cider vinegar, mix it and put in the fridge for the next week. Oh and I added some coriander seeds before making powder :D. Wonder how will it turn out (already tastes better than the one I made using only mustards seeds, water, vinegar and salt :D).

Do you find that when you first mix this together it is EXTREMELY salty? I've just tried this out with a mix of some fancy apple juice I got and some cider vinegar and the 2 tbsp of salt seems (and tastes) like way way too much... I'm going to leave it to soak and mature for a bit and see what it's like tomorrow.
